Peter Mercanti of Mercanti Specialty Foods Inc. is one of Hamilton’s hospitality pioneers. Peter’s innovations have reinvigorated food and hospitality in the Hamilton area.
Mercanti Specialty Foods Inc. continues to do so, with the help of Chef Steve Rydtschenko who leads all aspects of its food and food safety for Mercanti Specialty Foods Inc.‘s private label brands. Among those, Mama Yolanda, their handmade premium frozen lasagna whose recipe dates back seven generations.
To package their Mama Yolanda’s lasagnas and other private label meals, Steve selected our Pressed Paper trays. He also replaced his 1308 Tray Sealer with our 1908 Automated Tray Sealer to package up to 27 meals per minute. By opting for this option, Steve upgrades his packaging systems and increases volumes while maintaining a professional seal for their homemade recipes!
